The Control Acts on What It Reads
A refrigerator or wine unit does not measure temperature directly; it reads a sensor and adjusts cooling to match your set point. When that sensor drifts, the control chases a false value, overshooting cold and then coasting warm. This is the single most common cause of a wandering reading, and the part, a thermistor, is inexpensive. Beyond the sensor, an air damper that sticks between compartments can flood one side with cold air and starve another, and a door that is not sealing lets warm air in on a cycle of its own.
The Usual Causes
- Drifting temperature sensor: the control gets a false reading and over- or under-cools.
- Sticking air damper: the flap that meters cold air between compartments hangs open or shut.
- Door not sealing: a worn gasket lets warm air in intermittently.
- Blocked interior vents: food packed against the vents causes warm and cold spots.
- Control board fault: less common, but a board can misread or mis-command the system.

On Sub-Zero built-ins a drifting thermistor is the classic cause of a swinging reading, and dual-zone wine units show it as one zone that will not hold. Liebherr refrigeration flags sensor faults directly with E0, E1, and E2 codes plus a temperature alarm, which narrows the diagnosis quickly. Bosch and Miele units also surface fault codes for out-of-range sensors. Viking, Thermador, Monogram, and True Residential follow the same sensor-and-damper logic.
